Ingredients to make puree :
onion medium diced : 2
Tomatoes medium diced : 2
Garlic cloves : 7,8
Ginger : small peace
Green chilies : 2,3
Cashew nuts : 12 pcs
whole spices : whole black pepper : 5,6
cinnamon stick : 1 , black cardamom : 2
green cardamom : 2
Bay leaves : 1
Oil : 1 tbsp
Ingredients for gravy :
cottage cheese : cutted in cubes and grated : 1/2 kg
Oil : 1 tbsp
Onion : chopped
Tomatoes : chopped
clarified butter : 2 tbsp
Butter : 1 tbsp
Cumin seeds : 1 tsp
Bay leaves : 1
Whole red chillies : 2
Red chillies powder : 1 1/2 tsp
turmeric powder : 1/2 tsp
Coriander powder : 2 tsp
Salt : as per taste
Whole spices powder : 1/2 tsp
Shahi paneer masala : 3 tsp
curd : 1 cup
Cream or milk cream: 1/2 cup
dry Fenugreek seeds leaves ; 1 tbsp
Coriander leaves : chopped 100 grm
Recipe :
Roast all whole spices on a griddle except green cardamom.
put a pan on gas stove and and add diced onion , diced tomatoes , chopped garlic cloves , ginger , chopped green chilies , roasted whole spices and cashews . now add little bit water and oil in it and cover it with the lid. when all these ingredients gets soften then switch off the gas and put it aside by removing the lid to let it cool down.
when the ingredients gets cool down remove the skin of tomatoes, put it in a mixer jar and grind it to make a fine paste and put it aside .
Now put a pan on gas stove and add clarified butter in it , when it gets heat up add cumin seeds , bay leaves single , red chillies in it and fry. Sim the gas and add butter in it. now add chopped onions and fry them until golden brown, now add chopped tomatoes and cover it with a lid and let it get softer . switch off the gas and let it cool down.
Take the curd in a bowl and add chilli powder , turmeric powder , coriander powder and mix them well and put it in the pan , cover it with the lid and and switch on the gas to simmer and let it fry.
when it leaves oil aside then add salt , whole spices powder and shahi paneer masala in it .
add the puree we made in it and little bit of water according to your consistency choice , cream and mix it well , cover it with the lid and let it fry again on the simmer gas .
When gravy leaves oil aside add paneer (cottage cheese) cubes and grated paneer (cottage cheese) in it .
Add dry Fenugreek seeds leaves and mix it well. switch off the gas.
Garnish the dish with cream , grated paneer (cottage cheese) and coriander leaves.
Serve it with the Chapatis / Paranthas/ Naan or rice .
